20-minute Monday - Lime-cilantro rice, chick'n tofu, steamed vegetables, green goddess dressing

Well, the title says it all.  The rice is from Viva Vegan, the tofu from Bryanna Clark Grogan, the Green Goddess dressing from Appetite for Reduction, and the rest...that's to say the steamed vegetables and the garnish of red onions, cucumber, and radish, from me.  A successful group effort, culminating in a wonderful, very quick meal!

  1. What a gorgeous plate and a great combination of recipes! It's a best of all around. I love that you put some radishes on there.

  3. PS is that the breast of tofu chicken or whatever from the Chinese cookbook? Yours looks much crustier than I ever get mine to be!

  4. Thanks so much, foodfeud and Stacy! The picture did turn out surprisingly well ;-)

Stacy, it is that tofu chicken, and I took Bryanna's advice and dipped it in seasoned flour (p. 49) before frying it, which gives it that crust and makes it pretty. But taste-wise, it's just as good dry fried in a non-stick pan, IMO.

  5. Everything about that plate looks delicious! I have just ordered by first Bryanna cookbook (her most recent one), but I may need to look into her others as well!
