The first zucchini of the season have arrived! I love zucchini and am rarely at a loss for uses for it. Here it is shredded, lightly fried in lots of olive oil with garlic, red pepper flakes, green onions, parsley, salt and pepper, mixed with whole wheat pasta, and sprinkled with almonzano.
What a perfect meal. The quaternity of zucchini, pasta, olive oil, and garlic (add whatever else you will) simply can't be beat.
